"La Veccia Dispensa means "the old pantry" in Italian, and this pantry is full of small-batch balsamic vinegars crafted strictly in the traditional manner. In a picturesque stone village not far from modena, Roberta Pelloni and her husband, marino Tintori, begin with Trebbiano grapes solely from the Emilia Romagna. The grapes are cooked downand fermented, then aged in a series of barrels made of oak, mulberry, chestnut, acacia, and juniper.
